Life's a Beach at Beecher's

Cheese Curds

Beecher's Handmade Cheese Shop was under construction the majority of the year that we lived around the corner in the Flatiron/Gramercy area. Sadly, it was not completed before we moved away. I never really understood why it took so long to make a cheese store- that is until we walked by there this afternoon.



Two HUGE vats of milk were filled with hundreds of gallons of milk, each in a different stage of the cheesemaking process. One was still in liquid form, while the other had been turned to curds & whey. The cheesemakers were busy packing the curds into metal boxes which were then weighed (50 lbs!) and put onto stacks. These stacks were then squeezed down to remove excess whey. The whole process was so entirely captivating that it didn't occur to me to take pictures until after they were done (sorry folks!).

Of course, then we *had* to try some cheese curds! For some reason I thought it would be kind of bland and lumpy, but I found them to be flavorful and squeaky. Yes, squeaky. I've heard that adjective used before for cheese, but never really understood it until now. Try it- you'll see.

Not only is this little cafe a great place to grab lunch or snacks, but if you are lucky you'll catch an exciting cheese making show. An awesome stop for New Yorkers and tourists alike!
